Beetroot pancakes

Have you ever eaten pink pancakes? These healthy pancakes made from beetroot are gluten, lactose and sugar free. And - not unimportantly - also very tasty! Red beets are packed with vitamins, minerals and antioxidants and for that reason have many health benefits for, among other things, blood pressure, liver and a beautiful skin. You can also make a nice hot drink from beetroot!

Ingredients

  • 3 small, cooked beets

  • 2 bananas

  • 3 eggs

  • 50 gr buckwheat flour

  • 1 tsp vanilla flavor

  • 2 tbsp coconut yogurt

  • coconut oil (for baking)

  • Cinnamon

  • Red berries

Preparation

Place the beets, one banana, eggs, flour, vanilla flavor and cinnamon in the blender and blend until smooth.

Heat the coconut oil in a large frying pan over medium heat and fry 2-3 small pancakes at a time. Cut the remaining banana into slices. Stack the pancakes and garnish with a tablespoon of coconut yogurt, the slices banana and berries! Enjoy your meal!
