Couscous with broccoli and salmon
Couscous is made from coarsely ground durum flour and comes from
North-Africa. It is very popular in Algeria, Morocco and Tunisia. In those
countries it is also considered a national dish and is traditionally eaten on Friday. Couscous is of course also eaten on other days and it is made in multiple varieties too. Here you have the recipe for couscous with broccoli and salmon!
Ingredients
- 280 grams of couscous
- 600 grams of broccoli
- four pieces of salmon
- One stock cube
- A pinch of paprika powder
- 120 grams of dried tomatoes
- Four tablespoons of pine nuts
- A pinch of black pepper
- Four tablespoons of lemon juice
- A pinch of dried parsley
Preparation
Sprinkle the lemon juice on the salmon and then sprinkle the salmon with a
little pepper and parsley. Heat a pan with water and dissolve a vegetable broth cube in it. Bring the couscous to a boil according to the time indicated on the package. In the meantime, boil or steam the florets
broccoli. Drain the couscous and return it to the pan. Add the paprika powder and the dried tomatoes in pieces and stir it through the couscous. Then add the broccoli. Put the lid on the pan and keep it warm, possibly on very low heat.
Heat a little oil or butter in a pan over high heat and fry the pieces of salmon 3 minutes on each side. Serve the couscous with broccoli and salmon and garnish with
pine nuts.
