Kruidnoten are a delicious Dutch delicacy, but, unfortunately, they are high in sugar. This is a healthier version with an extra bite, thanks to the addition of almonds. Almonds are highly nutritious and contain vitamin E and healthy fats. Instead of sugar, this recipe uses coconut sugar, a healthier alternative to ordinary table sugar as it has a lower GI rating (the rate at which sugar is absorbed into your bloodstream).
This recipe makes around 40-50 kruidnoten.
INGREDIENTS
125 g wholemeal spelt flour
75 g ground almonds
65 g coconut sugar
1 tbsp speculaas spice mix
½ tsp baking powder
Pinch of salt
50 g coconut oil
25 ml milk or almond milk
35 g almonds, roughly chopped
METHOD
Remove the baking tray from the oven and cover it with a sheet of baking parchment. Meanwhile, pre-heat the oven to 175°C.
Mix together the wholemeal spelt flour, ground almonds, coconut sugar, speculaas spices, baking powder, and salt.
Melt the coconut oil in a small saucepan and add it along with the milk to the mixture. Mix together well and add the chopped almonds. Then, knead and form into a dough ball. When kneading, make sure the coconut oil isn?t too hot. If the dough is too dry, try adding a little more milk. If it?s too wet, try adding a little more flour.
Let the dough stiffen in the fridge for half an hour.
Make small, round balls from the dough, pressing them gently.
Place the kruidnoten on the baking tray, making sure there?s enough space between them.
Bake for 10-15 minutes and let them cool completely.
