Stuffed pitas with halloumi

Halloumi is a traditional, unripened Cypriot sheep and goat cheese that is ideal for baking because it melts less quickly. Due to the high protein content, a naturally crispy layer is created during baking that tastes heavenly. It seems a bit like a mix between feta (because of the salty taste) and mozzarella (because of the elastic structure) and is delicious in a meal salad, oven dish or on a sandwich.

INGREDIENTS for 2 people

  • 4 whole grain pitas
  • 200 grams of Halloumi
  • 150 grams of portobello or shiitake mushrooms
  • A red bell pepper
  • A red onion
  • 50 grams of rocket

For the sauce

  • 150 ml Greek yoghurt
  • 2 cloves of garlic
  • Half a lemon
  • Mint
  • Pepper and salt

PREPARATION

Prepare the pita in the oven as stated on the package.

Slice the halloumi and grill both sides in olive oil for a few minutes, until a crispy layer appears. Then put the slices of halloumi cheese on a plate. In the meantime, cut the bell pepper and red onion into slices and wok them together with the mushrooms in olive oil for a few minutes. Add salt and pepper.

Press the garlic and mix it with the yogurt, juice of half a lemon, and pepper and salt as desired. Tear over a few leaves of mint.

Cut open the pitas and fill them with rocket, stir-fried vegetables, grilled halloumi and yoghurt sauce. Enjoy your meal!
